Introduction:

Saint-Nectaire is a cow's milk cheese originating from the mountains of Sancy, Artense, and Cézallier, in the heart of the Parc Naturel Régional des Volcans d’Auvergne. It has held AOC status since 1955. Its production area, spanning Puy-de-Dôme and Cantal, is one of the smallest in Europe: high-altitude natural pastures are ubiquitous and form the basis of the cows' diet (minimum 70% of the annual ration). It can be made on the farm with raw milk (farm cheese) or in a dairy with pasteurized milk (dairy cheese). Its round shape, bloomy rind, creamy texture, and subtle flavors make it the ultimate sharing cheese, perfect to enjoy with friends or family, as an aperitif, on a cheese board, or cooked in recipes.
